<p>提及橄欖油料理，通常是用在煎、煮、炒、炸等日常烹飪；至於烘焙料理則大多是使用奶油，那麼橄欖油可以取代奶油作烘焙料理嗎？答案是肯定的，但需注意比例與烘焙類型。橄欖油是液態脂肪，適合用於蛋糕、瑪芬等濕潤型的烘焙甜點，因橄欖油與奶油的脂肪比例不同，替換時建議以奶油量的80～85%來換算成橄欖油，例如原食譜使用100克奶油就可改為約80克橄欖油。</p>

<p>準備好以下食材，你也可以在家自己動手做檸檬橄欖油瑪德蓮，健康無負擔的享受法式午后食光。食材：O&amp;CO.義大利檸檬橄欖油 120ml、O&amp;CO.西班牙鹽之花 4g、低筋麵粉 155g、雞蛋 3顆、泡打粉 5g、砂糖 100g。<br />
作法：<br />
1.雞蛋、砂糖放入鋼盆中打發後加入過篩的麵粉、泡打粉與鹽花，最後拌入檸檬橄欖油<br />
2.麵糊攪拌均勻後放入容器冷藏至少24小時<br />
3.烤箱預熱至200度，將麵糊填入瑪德蓮烤模中，放入烤箱烘烤10-15分鐘<br />
4.冷卻後脫模即可享用</p>
