<p>國立高雄師範大學科學教育暨環境教育研究所蔡執仲老師團隊與中鋼集團教育基金會合作，昨（23）日於美濃福安國小舉辦一場冬季特產「品旬味，食在地」-白玉蘿蔔在地饗宴的大學深耕計畫，共有來自不同縣市的親子家庭共102人參與。活動秉持以社區產業永續發展的精神，運用美濃在地友善環境的特色農產，在白玉蘿蔔季節近尾聲，妥善利用農民的盛產作物進行全株利用，不僅有助於減少浪費，更能進一步提升農業資源的有效運用。</p>

<p>計畫主持人蔡執仲老師指出，盛(剩)產物是作為醃漬物的最佳材料，透過手工傳承與創新的技法，將當地的風土透過時間的催化，讓食物的滋味於瓶罐中，醞釀食材的醇厚味道。活動由親子共同動手做，一起「共農」體驗農事工作，現場集結親子、三代同堂在農田裡和樂融融的拔蘿蔔的畫面、製作客家特色料理等系列活動。透過在地食農環境教育議題瞭解「人、地(環境)、產(產業)」之間的鏈結，重新建構人與土地間的情感，培養參與人員對環境的覺知並提昇在地產品的價值。藉由本校辦理食農教育之體驗活動，讓參與者將實作經驗，轉化為生活中的實務知識，為在地特色農產行銷注入新的活力。</p>

<p>本活動強調「動手做」的體驗，讓學員親自參與農產品從生產、處理至烹調的完整過程。藉由慢食的理念，運用在地食材做創意料理，從產地到餐桌整體流程，連結食農與技藝的文化，傳遞傳統的技藝的製作方法，延續農村生活的智慧，提升學員對在地農業的認同，體會農人的辛勞與珍惜食物。為了豐富活動的體驗，特地邀請了社區業師現場進行烹飪示範，讓學員共同品味「白玉-幸福的土地滋味」的美味佳餚。</p>

<p>高師大校長王政彥表示，為落實大學社會責任實踐的精神，本校攜手中鋼集團教育基金會，於美濃福安國小設立環境教育及食農教育基地，推動永續的循環經濟，讓社會大眾從知農、體農、做農中活化在地資源，轉化為新的經濟型態，此具體作為符合本校推動「TAKE」（Teaching、Administration、Knowledge、Extension）的行動策略，為在地社區創造新的經濟價值。</p>
