<p>江南麵屋的招牌炸醬麵採用傳統韓式做法，以黑豆醬為基底，加入洋蔥、五花肉與蔬菜，以小火長時間拌炒出濃厚的香氣與自然甜味。醬料煮好後再與手工麵條拌勻，黑亮濃稠的醬汁裹滿每一條麵，鹹香中帶著溫潤的甜，這是每個韓國人從小吃到大的味道，也是外國人最容易愛上的韓式靈魂料理。</p>

<p>「我們想讓台灣人吃到真正的韓國味，也讓在台的韓國人能找到家的味道。」李旼奎說。他特別選擇高雄的新濱町開設首店，是因為這裡有陽光、有海、有生活的節奏，讓他聯想到小時候家鄉的海邊風景。站在鼓山渡船頭，看著潮汐起落，他說：「這裡有家的氣味。」</p>
