<p>苗栗縣公館鄉婦女會於(5)日在館南村社區活動中心，舉辦客家傳統四炆四炒烹調研習活動，縣長鍾東錦、夫人陳美琦也到場品嘗道地客家美食，縣長盛讚四炆四炒這些客家美食能夠原汁原味的展現傳統的風味，也期許年輕人傳承客家美食，讓客家美食發揚光大。</p>
<p>兼任公館鄉婦女會理事長的縣議員孫素娥說，今天是第5年舉辦四炆四炒研習活動，他表示四炆四炒是她嫁到客家大伙房後就學習到並一直傳承下來的，每到年節或掃墓，只要有宴客，叔伯姑嫂等都會期待四炆四炒出現在餐桌上，代表著今天的料理很澎湃，也藉此凝聚親朋間的向心力，希望這些料理不要失傳。</p>

<p>縣議員孫素娥也表示，承蒙鍾縣長及徐前縣長的支持，努力推動客家地方文化，藉此傳承、推廣客家美食，並增進各村與社區的互動。今天活動除縣長鍾東錦、夫人陳美琦伉儷聯袂出席之外，還有苗栗市長余文忠、縣議員曾美露、鄉代會主席趙興邦及代表、縣婦女會理事長蕭芳纓、村長、社區發展協會理事長等參與盛會。</p>
<p>四炆四炒是客家傳統的特色料理，常以年節三牲帶入做菜，彰顯客家人勤儉惜物的美德，「炆」是以慢火將食材烹熟煮軟，「炒」是用熱油爆炒菜餚，各有風味。四炆包括鹹菜炆豬肚、炆爌肉、排骨炆豆乾、肥湯炆筍乾；四炒則為客家炒肉、薑絲炒大腸、豆皮炒韭菜、鹹酸甜的豬肺鳳梨炒木耳。其烹調菜色不鋪張奢華，卻是色、香、味俱全，今天餐桌還外加客家甜點「熝湯糍」和剁雞冷盤，可說是客家料理的滿漢全席。</p>
<p>縣長表示，他每年都參加這場盛會，讓客家美食文化源遠流長，也藉活動讓大家齊聚一堂，交流感情，也感謝縣議員孫素娥將活動辦得有聲有色，客家文化流傳悠久，每個地方各具特色，縣長也期許類似活動能多加辦理，並希望更多年輕人參與，讓客家文化及美食永續傳承、發揚光大。</p>
