<p>夏季御膳料理以「火取煙燻鮪魚下巴 堅果沙拉」揭開序幕，選用油脂豐富的鮪魚下巴部位，以煙燻火取手法處理後搭配爽脆堅果與特製高菜塔塔醬，為整體風味增添鹹香與濃郁口感。箸休則為「油封帝王蟹 烏魚子 湯葉空也蒸」，將蟹肉以低溫油封技法保留肉質細嫩，再融合日式高湯與綿密豆腐製成口感細緻的蒸物，鋪上鹹香烏魚子點綴，更顯奢華層次。</p>

<p>主餐四選一，包含：日籍渡邊正紀主廚循日本關東料理技法，以炭火香氣與醬汁完美融合的「雙色鰻魚御膳」，集蒲燒與白燒鰻魚於一體，雙重滋味交織鮮甜；「紅燒龍膽石斑」以手工熬製醬汁滲入魚肉，細緻滑嫩、入味不腥；「日本和牛漢堡排」嚴選日本頂級A5黑毛和牛，加入爽脆洋蔥及特製調料均勻混合，每日新鮮手打，搭配生蛋黃照燒醬，展現肉香與甜美交融的平衡；「黑鮪魚綜合生魚片壽司丼飯」則以新鮮黑鮪魚大腹、皮油、赤身、鮭魚卵、干貝與星鰻等共十款頂級海鮮食材堆疊，澎湃呈現旬之極味。前三款主餐加價300元可再享五種當日嚴選鮮魚生魚片，增添飽足與豐盛。止椀提供暖心「蝦子 桂丁雞腿土瓶蒸」，精選雞腿肉與鮮蝦共熬高湯，湯清味濃。</p>
